Grilled Vegetable Shish Kebabs are the perfect addition to your meals this summer! Throw together your favorite vegetables on a skewer and grill it for a sweet taste of summer.
Good tips to remember: Cut the vegetables into similar size pieces so there won’t be larger pieces overshadowing smaller ones. Space vegetables out on the skewer and leave space at the bottom of the skewer for easy handling. If you are using wooden skewers, be sure to soak them for at least 30 minutes prior to using.
1/2 cup Cherry Tomatoes
1/2 cup Zucchini
1/4 cup Red Onion
1/2 cup Red, Green, & Yellow Peppers
1/2 cup Small White Portobello Mushrooms
2 Cloves Garlic (halved)
1/4 Tsp Salt
1 Tbsp Olive Oil
2 Tsp White Balsamic Vinegar
In a bowl toss the vegetables with garlic, olive oil, and vinegar. Allow mixture to marinate for 30 minutes.
Preheat the grill to medium. Thread vegetables on the skewers and grill for about 10 minutes or until vegetables are slightly soft, turning at least once.
